What distinguishes Iranian pistachios from its rivals is not only its exquisite taste, elegant shape, diversity of its variations or miraculous nourishing properties but also Iranian Pistachio has never been genetically manipulated and no hormonal or chemical agents are used in its growing.

Naturally Open In-Shell Pistachios: Naturally split on the tree, with a kernel content of 52 to 55%, this product is used purely as a snack, raw or roasted salted and flavored in the shell. Open in-shell pistachios are mostly exported as raw dried, in bulk. Raw dried pistachios have a two year shelf life, if stored in relatively dry conditions.
Mechanically Opened pistachio are produced from the closed shell pistachios which missed some maturity to split naturally on the tree. Our technology allows us to mechanically opened along the suture of the nut to look similar or near similar to the naturally open pistachios. The difference with naturally open pistachios is a lower kernel weight to in-shell ratio (kernel content). Our MOs have a kernel content of 47-50% which is roughly equal to the naturally opened ones from the main producing origin such as USA. MOs are used as snacks for hard discount markets.
Raw pistachio kernel production consists in shelling closed pistachio, mature or immature, depending if kernel external appearance or kernel internal color is targeted. Our process includes latest laser and optic technologies to eliminate any risk of natural contaminants and any foreign material.
Kernels are used mainly in snack, confectionary, backing, ice cream and home backing, and as ingredient in other food industries.
Green pistachios are voluntarily harvested earlier to assure a bright green kernel internal color.
The early harvest causes reduced yield per hectare which is the main reason for their higher value, but allow its unique dark or bright green color in comparison with any other nut. The higher fat content emphasizes also their flavor for high quality confectionary, pastry and ice-cream industry.
GPPK are peeled (shell and skin are removed) allowing its natural and unique bright green color to appear. The product is graded by color using electronic equipment within a 4 different grades of greens.

What is the difference between Akbari Pistachio and Ahmad Aghaei Pistachio?
In order to know more about the difference between Akbari pistachio and Ahmad Aghaei one, you should pay attention to these points. The trees of these two types of pistachios are the same in terms of their height and width growth, the buds of both are circular and short in length. For this reason, in order to distinguish the difference between Akbari pistachio and Ahmad Aghaei pistachio, one should also pay attention to other points, including that Akbari pistachio and Ahmad Aghaei pistachio are different in the shape of their shell cracks and the color of the fruit core. Of course, there are differences in the types of trees and their uses. Although these two types of pistachios are similar in appearance, Akbari pistachios are slightly taller than Ahmad Aghaei pistachios . In terms of taste, both types of pistachios are very tasty. How To Store Pistachios
Pistachios are packed with nutritional value; tasty to snack on and incorporate into dishes. So, they are worth protecting by storing them correctly. Correct storage makes sure you get the most value for your dollars spent.
KEEPING THINGS COOL
A refrigerator is the best place to store pistachios if you don’t plan to eat them all right away. Package them in an airtight container (Ziplock, Tupperware, jar with tight lid) and they will stay fresh for up to a year. An airtight package helps prevent condensation, which would make them lose their crunch.
PANTRY STORAGE
Stored in a pantry or other cool, dark, dry place, a package of unopened, in-shell pistachios stays fresh for about six months; potentially even a few months longer. If the package was opened, transfer to any airtight container for storage. Pistachio kernels only stay fresh for about 3 months in the pantry, so storing them in an airtight container in the refrigerator is preferred. Check an unopened package for a “use by” date to ensure the nuts aren’t already old when you purchase them. This stamped date is a good starting point to gauge how much longer the nuts can be kept at room temperature.
Pistachio nuts (and any other type of nut) are heat sensitive. Prolonged heat begins rancidity in oils. Keep nuts out of direct sunlight and away from the oven, stove top, heater or other sources of heat. When traveling, keep the pistachios in the vehicle with you, rather than in the trunk, cross country in the summer!
FREEZING TIME
A freezer is an even better option for long-term storage. In-shell pistachios stay flavorful for up to two years when properly frozen. Pistachio kernels do not freeze as well, long term, and should be used within one year. Always put the nuts in an airtight container. When ready to use the pistachios, allow the entire package to thaw to room temperature, and then remove what you need from the package before returning the container to the freezer. Unlike many other foods, nuts can be thawed and refrozen multiple times.
After thawing, if you notice the pistachios are not as crunchy as you want, you can toast them on a baking sheet in the oven for 10 to 15 minutes at 200 F.
WHEN TO PITCH
Besides using time as your guideline for determining when to discard, a taste test is the true way to know if the nuts are still edible. The natural oils can go rancid if the nut has been exposed to too much heat during storage. If a taste test determines the nut is off-flavor, throw them away, including the piece you’ve sampled. There is no harm in eating a rancid nut, but there is no need to have a bad taste in your mouth!
